“Meaty” Tomato soup (Vegan if egg noodles left out)
The Kay/Paul Kiles liked this because it is vegetarian, milk-free, and free of high fructose corn syrup
Ingredients:
Large jar marina sauce (choose a brand with chunky tomatos and no artificial sweeteners)
2 cans (14 oz) vegetable broth
2 large carrots, grated
1 small red onion, chopped
1 garlic clove, chopped or mashed
salt and pepper to taste (I used about 1 t. and 1/2 t. of these)
egg noodles, uncooked (I used about 1/2 a large bag)
Throw the sauce and broth in a large pan, and as they begin heating prepare vegetables. Let simmer as long as needed to time your meal– when everyone is about ready to eat, toss in egg noodles and continue to simmer for about 5 minutes– watch time closely, as keeping the noodles at the right texture is part of what makes this good.
